As lecturer for the School of employability I am responsible for Clyde Kitchen groups, ESOL Transitions into Hospitality along with the school of supported learning, I teach Moving on to Independence cooking and Eat on 8 Café Skills, I also Teach a Schools link baking Class, I also lecture to the princes trust and Tomorrows People. So as you can see my range of students is extensive.

My Career as a chef has been a Successful one, Having Been a Head chef from the age of 19, I have been the Group Executive Head chef For Scotland as Part of Restaurants Associates Covering sites in Glasgow, Edinburgh and Aberdeen. Responsible for the financial performance and menu development of all sites, I was also project manager for the salad bar project covering 27 sites across the UK.

I have worked as an executive Chef for Khubli Khans Mongolian Restaurant developing Exotic dishes form a wide range of exotic meats such as Kangaroo, Ostrich, Zebra, Crocodile To mention but a few, During my time hear my recipes were featured in No 1 Magazine and I appeared Regularly on BBC Radio Scotland.

As executive chef At BBC Scotland I was also responsible for all food outlets in the Building Including cooking for the celebrities during the times filming or being interviewed by the BBC. Having cooked for some big names From Jessie J, to all of the Mrs Browns Boys along with an endless number of others.

I was also the Head chef At Hampden Park Scotland’s number one stadium. I was responsible for putting out over 2000 Three coarse meals during football games at Hampden Park. This was just a small part of my job hear as it was extensive in the area of Business and Industry and conference and Banqueting.     

As Head chef At the Lighthouse Back in 1999 I also cooked For Prince Charles and William, during this Visit I had to prepare a banquet fit for the Prince, and this was by no means an easy job. 

So I feel that the experience I have to give to my students is a valuable. I can give every student who comes through my Kitchen the Necessary cooking skills, and a No Thrill’s look at the Catering and hospitality industry. I deeply enjoy my work at Cardonald campus and Glasgow Clyde College and there is no other school I would be happier to work, than in the school of Employability.
